Making muesli

I’ve been making my own muesli for a while now. I just like the fact that I can put whatever I want in it. Plus, the stuff you  buy in the shops is either garbage or crazy expensive. I mean, I have seen small packets of muesli for $20+ !! That’s some crazy shit right there. Although, making it myself isn’t exactly the cheapest thing in the world – nuts are expensive!

So, I will list the ingredients I’ve been using and the method, in case anyone feels inspired to make some too. It really is super easy. Remember, you can pretty much put whatever you want in it, but this is how I’ve been making it recently. (Measurements aren’t exact, cos I just make them up at the time)

Blainie’s Muesli

Ingredients

A couple of cups of rolled oats, 1 cup of puffed rice, handful of almonds, handful of pecans, 2Tb sesame seeds, 2 Tb pepitas, 2 Tb sunflower seeds, 2 Tb flax seed flakes, 1 tsp cinnamon, pinch of salt, 1/4 cup coconut oil, 1/4 cup maple syrup, dash vanilla essence

Method

Preheat oven to 160 degrees Celsius.Mix all the dry ingredients together in a bowl. Mix coconut oil, maple syrup and vanilla essence in a small pan and melt over low heat (if the weather is really hot and your coconut oil is already liquid you don’t need to do this). Mix coconut oil mix through oats mix. Put in a baking tray and bake in oven for approx 30 minutes – give it a bit of a mix up after 15 minutes. Remove from oven, let cool and enjoy!
