Tonkatsu sando

Look, some days just call for pork Katsu sandwiches for dinner. Today was one of those days. One of my favourite foods when travelling in Japan is a tonkatsu sandwich. Usually, picked up from the local 7/11 or Sun K Us. Although, sometimes when I’m feeling particulary fancy, I get them from the food basement of a department store such as Isetan or Mitsukoshi or the like. Crumbed pork cutlet in soft white bread. What’s not to like?
Of course, recreating my own at home is never the same as the ones in Japan, but hey, it’s close enough. I even cut the crusts off the bread in true katsu sandwich tradition.

And, just in case we hadn’t had enough carbs (or wheat) today, I made carrot cupcakes with cream cheese frosting for dessert. I love carrot cupcakes.
