3 types of salsa and plantains!

image image image image imageStill feeling a little under the weather today, but dinner made me feel a bit better because it was so good! Our favourite vege store (Innaloo Fresh) randomly had plantains in stock when we were shopping there on the weekend. I didn’t waste any time snapping a couple up. I’ve never seen them in Perth before, and thus have never cooked them before. As I was busy making salsas – guac, pineapple and coleslaw and making fresh tortillas for fish tacos, I made Steve cook the plantains. They are sliced, peeled, fried, flattened, dipped in salt water and then fried again. And they were crispy and delicious! The fish was Mangrove Jack from Catalano’s and it was spectacular. Yum!
