Onsen eggs

I had another go at making “Onsen eggs” on Friday. In other words, slow poached eggs in their shells. It took about 40 minutes with the eggs in water kept at around 140 degrees Celsius.


They turned out almost perfect. I think they could’ve used maybe another 5 minutes in the water.


I put the eggs in beef and udon noodle soup, so good!
