I was tired after work, and was just going to cook up some prawns I had in the fridge with some rice. Then I found some plantains in them fridge and decided to cook those too. And some corn. Oh and I’d better make a salsa to go with it all. Before I knew it, there was a whole Mexican feast. The corn was especially delicious – cooked in butter with a bit of salt, pepper and oregano then topped with feta, mayonnaise and paprika – sooooo good!
