I’ve been a bit quiet on here recently. I guess I haven’t really been making any food that I deem exciting enough to post here. That said, I thought I would do a quick update of some things we have been eating recently.
Firstly, there’s this huge beef rib that I bought from the butchers at Charlie’s. I didn’t even have a clear picture of what I was going to do with it, but I knew I had to have it.

I ended up slow roasting it with a spice rub that I left on it over night. It turned out really delicious and pull apart-y. Unfortunately I forgot to take a photo of how it turned out. We ate it too fast.
Next we have a pot of Beef bone broth that I cooked for about 8 hours. I used the broth to make Vietnamese Pho (as opposed to German or Indian Pho…ha ha ha…) It was really, really good. I’m a bit addicted to Vietnamese food at the moment.
Speaking of Vietnamese food and my new addiction, here’s a Vietnamese-esque salad with prawns. Also very delicious and light.
This recipe for Crispy Roast Pork Belly I got from the SBS food website, and it’s become a fast favourite. I made it twice in 2 weeks – a rarity around here.
And last but not least for this post, we have Carrot Cupcakes. I’m on school holidays at the moment and it’s been raining all week, so baking cupcakes seemed like the right thing to do. I do love carrot cake of all types, though I can’t eat it much or often, as too much sugar and wheat tends to upset my stomach. I was prepared to risk it this time though. I only made 6 anyway.
