During the midst of baking Stollen on Christmas Eve, there was a lot of waiting around to do, and at some stage lunch needed to be eaten. I’d made to trip to Catalano’s Seafoods earlier in the morning (and was surprised to find it not too crazy busy) and had bought a random assortment of seafood. As I had bought some oysters and I had some bread rolls, I had just one thought – Oyster Po’ Boys. Yes, fried, battered oysters in bread rolls with mayo and lettuce, what could be better? Ahh…pretty much nothing. So I cooked up some oysters in a cornflour batter, put them in some rolls and we eated them. And thus, a new Christmas Tradition was born.
